A Vegan chili recipe inspired by Walt Disney’s recipe–perhaps the top recipe out there. It’s pretty simple to make and it’s absolutely packed with favors. Think about zesty tomatoes, beefy mushrooms and just the right blend of spices. It’s so good that it’s hard to describe in words.
This vegan variation of chili is inspired by the all-time popular chili dish served on Disney land’s Carnation cafe. Walt would always enjoy his chili with salty crackers but you can eat it anyway you want.
To achieve the same rich flavors as the original Walt Disney chili recipe, I had to use my creativity and try a few extra spices.By incorporating smoked paprika, I succeeded in hitting that beefy and slightly smoky note that is found in the original recipe.
For the beefy texture, I used mushrooms as they have a meat-like consistency and flavor on their own and absorb all the seasonings in the same manner regular meat would.
And yes, this Vegan Chili Disney mock recipe came out even better than I had anticipated. It strikes the perfect balance of spiciness and has the flavour and texture that I hoped for. Plus it’s healthy and you can eat this anytime, even on a diet.

Serving Disney Copycat Chili With
Walt Disney himself always used to take his popular chili with saltine crackers, however in the Carnation Cafe, the chili is typically served with sour cream, grated cheddar, and 1-2 chopped tomatoes. It’s not only flavorful but it looks great too!
Vegan Walt Disney Style Chili
This tasty chili is a vegan twist of the popular Walt Disney chili served at Disneyland. It’s a very simple 1-pot recipe made with beefy mushrooms, tomatoes, beans and seasonings. Plus, it’s delish!

Ingredients
- ¾ pounds mushrooms, finely sliced
- 1 lbs/450g portobello mushrooms, chopped
- 1 medium Green bell pepper, diced
- 1 can diced tomatoes
- 2 plum tomatoes, chopped
- 1 (14.5 oz) can Pinto beans, rinsed and drained
- 1 (14.5 oz) can Kidney beans
- 3 tbsp tomato paste,
- 2 tbsp vegetable base
- 4 cloves of garlic, minced
- 1 tbsp ground cumin
- ¾ tsp cayenne pepper
- 1 tsp smoked paprika
- 1 ½ tbsp onion powder
Toppings for Walt Disney Style Chili
- ½ cup Vegan sour cream
- 1 cup Vegan cheese, shredded
- 1-2 tomatoes, diced
Directions
-Add the olive oil into a large pot to heat and add the sliced mushrooms. Allow them to cook over medium heat while you stir every 1-2 minutes, until the mushrooms are nice and tender.
-Once the mushrooms start to tenderize, add in the garlic and green peppers and mix well. Allow everything to cook for a couple of minutes.
-Next, add the onion powder, ground cumin, cayenne and salt and combine well.
-Lastly add the vegetable base, canned tomatoes, diced plum tomatoes, tomato paste and beans until mixed well.
-Bring everything to a boil and once it has reached that point, reduce the heat to low. Allow the chili to cook for 5-7 minutes to blend and set all the flavors.
-Add extra water and a bit of salt if necessary and serve with a spoonful of sour cream, vegan cheddar and diced tomatoes (optionally).
