Cheddar Bay Biscuits Red Lobster

You can make these vegan cheddar bay biscuits in a jiffy, if you have all the ingredients ready. You can use store-bought vegan cheddar cheese, biscuit mix, and vegan butter for a quick and simple recipe. However, to add more authenticity to the dish, we recommend using homemade vegan cheese and vegan butter. You can make these in batches, whenever you have time and store them in airtight containers in the refrigerator. This way, you can use them whenever you plan to bake vegan goodies.

Ingredients needed for making copycat vegan Red Lobster’s biscuits

To make 6 to 8 biscuits, you would need the following ingredients. With all of these ready, you can make fluffy, healthy, tasty and flavorful biscuits within 15 minutes!

  • Bisquick (or the biscuit mix) – 1 cup (vegan or gluten-free as per your choice)
  • Vegan milk – 1/3 cup (use any plant-based milk of your choice)
  • Shredded Vegan Cheese – ½ cup
  • Melted Vegan Butter – ¼ cup
  • Parsley – 1 teaspoon
  • Garlic powder and salt combined – ¼ teaspoon
  • Old Bay Seasoning – 1/8 teaspoon (can avoid if you don’t have this)

Process of making vegan cheddar bay biscuits

  • First, you need to prepare your microwave by pre-heating it to 450 degrees F.
  • In a big mixing bowl, add the Bisquick mix.
  • Add the shredded vegan cheese to this mix and stir well.
  • Add the plant-based milk to this mixture. You can use soy milk because it is quite thicker than other vegan milk types. However, you can also use coconut, almond, cashew, oat milk, or anything you prefer.
  • Stir gently so that all contents are mixed well, but take care not to over-stir the mixture.
  • Pour ½ or 1/3 of this dough mixture on a cookie sheet (depending on the size of your sheet). Bake it for 8 to 11 minutes.
  • You will notice that at the end of the 8th minute, the cookies start turning golden brown and slightly dry.
  • When the biscuits are getting baked, you can prepare their coating quickly. For the coating, take a small bowl and pour melted vegan butter into it. Add the other ingredients, such as garlic powder, salt, parsley and Old Bay Seasoning (if using) to the butter. Mix the contents well.
  • Once the cookies are baked and ready, slowly insert them one by one into the flavored vegan butter mixture to give them a nice coating.
  • Vegan Cheddar Bay Biscuits with the same flavor as what you get at Red Lobster, are now ready.
  • Serve them immediately when they are warm.
  • If you want to store them, allow the baked cookies to cool for a while before storing them in airtight containers. At the time of serving, you can give them a fresh coating of vegan butter.

Some points to keep in mind while baking these biscuits

  • Please ensure that the dough is moist and in a sticky consistency when pouring to the cookie sheet. If the mixture is dry, the biscuits won’t come out fluffy.
  • While these are vegan versions, you can also make the recipe gluten-free, by buying gluten-free Bisquick mixture from the stores. Always check the labels of the packet properly to ensure you are buying vegan, gluten-free brands only.
  • Instead of buying store-bought Bisquick mix, you can make the vegan, gluten-free flour right in your home, using simple ingredients.
  • To make a spicy version, you can add ¼ teaspoon of cayenne pepper to the coating.

Making homemade vegan butter for these biscuits

  • In a bowl add ½ cup of vegan milk and ¼ teaspoon of lemon juice. Allow the mixture to settle down and get curdled. Please don’t stir it at this stage.
  • Pour equal quantities (about ¾ cups each) of warm coconut oil and canola oil in a blender. To this add a teaspoon of salt and 2 teaspoons of soy lecithin. Add the curdled mixture of vegan milk & lemon juice to the blender, and nicely blend the contents for about a minute.
  • Transfer this to a glass container, seal it well and keep it in the freezer for 1 hour. Homemade vegan butter is now ready to be used. Remember to transfer the butter to the refrigerator once it has become nice and firm.

Making homemade vegan cheese Red Lobster’s biscuits

  • In a saucepan, empty the contents of a can of full-fat coconut milk and add about ½ cup of hot water to it.
  • Keep stirring the mixture, while you add 2 tablespoons each of agar-agar and nutritional yeast. Stir the contents and keep adding 1.5 teaspoons of salt & garlic powder and ½ teaspoon of lemon juice.
  • Stir the contents on medium flame till the mixture starts to boil. Once it boils, bring down the flame, and let the mixture cook for 6 minutes for the yeast to get activated.
  • After 6 minutes, switch off the flame, pour the mixture immediately into the cheese molds you have kept ready by brushing them with vegan oil. Allow the mixture to cool in the open molds for about 15 minutes.
  • After 15 minutes, seal the molds well and place them in the refrigerator for 2 hours to set well.
  • After 2hours, when the cheese has become firm and solid, you can slice or shred them, as per your convenience for the vegan cookies you plan to bake.

Preparing vegan butter and vegan cheese at home helps you save a lot of money and time in the long run. Prepare them in batches whenever you have time, so that you don’t have to buy the expensive brands from the supermarkets near you.
