Gyros Seasoning:

- 1 pound firm tofu
- 1 tbsp of veggie bouillon
- 2 Tbsp soy sauce
- 1 tbsp maple syrup
- 2 Tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tbsp smoked paprika
- 1 tbsp veg bbq sauce
- 2 Tbsp olive oil
- 3 Tbsp water
- Gyros Seasoning (we prepared before)
Marinated Onions:
- 1/2 medium red onion, thinly sliced pole to pole
- 1 Tbsp lemon juice
- 2 Tbsp chopped fresh dill
- 2 Tbsp chopped fresh parsley
- 1-2 tsp olive oil
- Salt and pepper, to taste
Instructions:
- If using extra firm tofu, press for at least 30 minutes. If using super firm tofu, pat it dry.
- Prepare gyro seasoning: Combine all gyro seasoning ingredients in a small bowl. Set aside.
- In a separate bowl, mix the veg bouillon, soy sauce, maple syrup, smoked paprika, garlic powder, veg bbq sauce, chili sauce, olive oil, water, and gyro seasoning to make the marinade.
