Gyros Seasoning:

  • 1 tsp chopped fresh rosemary (or 1/2 tsp dried)
  • 2 tsp dried oregano
  • 1-2 tsp ground cumin
  • 1 tbsp smoked paprika
  • 1/2 tsp cinnamon
  • Salt and pepper, to taste

Gyros Marinade:

  • 1 pound firm tofu
  • 1 tbsp of veggie bouillon
  • 2 Tbsp soy sauce
  • 1 tbsp maple syrup
  • 2 Tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tbsp smoked paprika
  • 1 tbsp veg bbq sauce
  • 2 Tbsp olive oil
  • 3 Tbsp water
  • Gyros Seasoning (we prepared before)

Marinated Onions:

  • 1/2 medium red onion, thinly sliced pole to pole
  • 1 Tbsp lemon juice
  • 2 Tbsp chopped fresh dill
  • 2 Tbsp chopped fresh parsley
  • 1-2 tsp olive oil
  • Salt and pepper, to taste


  1. If using extra firm tofu, press for at least 30 minutes. If using super firm tofu, pat it dry.
  2. Prepare gyro seasoning: Combine all gyro seasoning ingredients in a small bowl. Set aside.
  3. In a separate bowl, mix the veg bouillon, soy sauce, maple syrup, smoked paprika, garlic powder, veg bbq sauce, chili sauce, olive oil, water, and gyro seasoning to make the marinade.
  4. Heat a pan to medium and fry the tofu until golden brown, about 8 to 10 minutes.
  5. Add the marinade to the pan slowly, stirring to rehydrate the tofu and give it flavor.
  6. Your tofu gyro is ready! Serve in a pita with tomatoes, marinated onions, tzatziki, and fries.
  7. For Marinated Onions, combine the sliced red onion, lemon juice, dill, parsley, olive oil, salt, and pepper in a bowl. Serve immediately.
