Ingredient

  • 5 tablespoon Olive-oil
  • 1 large potato
  • 2 Carrots
  • 1 large Onion
  • 4 tablespoon Pickle Juice
  • Pickle as per your taste
  • 3 tablespoons of Pickle
  • 2 teaspoon flour
  • ½ cup coconut milk
  • 1 ½ of vegetable stock

Instructions

  • Take a large pot and add oil to it. Heat the oil for some time.
  • When the oil gets heated, then add carrots and onions into it. Cook the vegetables for 9 minutes until they become soft.
  • Now, add Dill pickles and cook for 2 more minutes. Then shift all the vegetables into another container with the help of a spoon.
  • In the same pot, add chicken stock. Now, add diced potatoes into it. Let them boil for 10 minutes. Keep on stirring during the boiling.
  • Now, combine coconut milk, flour, and pickle juice into the small bowl. In a pot, add cooked vegetables and flour mixture. Boil the soup until potatoes are cooked nicely.
  • Now, add the salt and black pepper. Mix everything well. Once the soup becomes thick, turn off the stock.
  • Pour the soup into the serving bowls. It’s time to enjoy this mouth-watering soup.
