  1. Prepare the Tofu. Press the tofu between paper towels to remove excess moisture. Cut the tofu into 1-inch cubes.

What is the difference between saag and palak?

Palak means spinach specifically. Saag is the broader word and covers mustard greens, fenugreek and other leafy greens, often in a mix. Most restaurant dishes sold as saag are in fact palak. This recipe uses spinach, so palak tofu is the more accurate name for it.

Should I press the tofu?

Yes, and for longer than you think. Water in the tofu is water that the spices cannot get into, and it thins the sauce as it cooks out. Twenty minutes under something heavy is the minimum. Extra-firm is the tofu to buy here, not firm and certainly not silken.

Can I use frozen spinach?

Yes, and it is cheaper and easier. Use about 300g frozen in place of the fresh, thaw it and squeeze it properly dry in a tea towel before it goes in. Skipping the squeeze is how this dish ends up watery.

What do I serve with it?

Rice or naan, and that is about it. If you want a second dish, keep it dry rather than saucy so the two do not compete: something roasted, or a simple dal.
