Fresh Strawberry Cake (Vegan)
Vegan strawberry cake is a moist, egg-free sponge made by folding pureed fresh strawberries and dairy-free yoghurt into the batter. It uses seven ingredients, no dairy and no eggs, and bakes in about 25 minutes as two round layers, finished with a dairy-free cream cheese frosting once cooled.
Vegan strawberry cake has a tender, fluffy crumb, with most of the flavour coming from the strawberry puree folded through the batter. For extra strawberry flavour, add some to the frosting as well.

This cake uses a dairy-free cream cheese frosting, with a little pink food colouring added.
Mix 8 oz of vegan cream cheese with 1/3 cup vegan fat and beat well until it turns creamy. Add 2 cups of sugar and keep beating, then add another 2 cups of sugar along with the vanilla extract. Food colouring is optional at this stage. Beat until smooth to get a thick frosting, adding more sugar if you want it firmer.
What other frosting flavours can you try?
For a vanilla frosting, add half a teaspoon of vanilla extract to the frosting base.
For a chocolate frosting, add around a quarter cup of cocoa powder to the base frosting.
For a vegan strawberry frosting, put some dried frozen strawberries into the base frosting and blend until well mixed to get a pink frosting.
How do you get the best results with this cake?
- Most preferably use fresh strawberries instead of frozen ones.
- Wait for the cake to cool before you frost it, if you don’t do that, the cake will start sinking.
- The cakes continue their cooking process when they are being cooled, so resist the urge to overbake them.
- Put parchment paper at the bottom of the pan or use a spring-form pan, do not forget to oil the pan so it can be slick. It makes removing the cake easy.
- Do not use coconut oil for greasing your pan, it does dry out the cake as opposed to keeping it fluffy or moist.
Vegan Strawberry Cake Recipe
Here is the full recipe for vegan strawberry cake.
Ingredients
- one cup of strawberries well blended and pureed (about 225 g)
- one and a half cup of flour, most preferably gluten-free (about 190 g)
- One teaspoon of baking powder
- Half a teaspoon of baking soda
- One cup of sugar (about 200 g)
- Half a cup of any desired oil (about 120 ml)
- Half cup of yoghurt, vanilla, or plain, dairy-free (about 120 ml)
Directions
- Preheat your oven to somewhere around 360 F (about 180 C).
- Line two 8-inch (20 cm) pans with cooking spray and set aside.
- Blend your strawberries till the point where you get your puree.
- Get a good size bowl, and mix your flour, baking powder, and soda very well.
- Get another bowl, and mix all of the other ingredients (sugar, yoghurt, strawberries, and oil) until it forms well (creamy). Tenderly fold the dry mixture and mix till it forms well.
- Put your cake batter in your 2 cake pans. Bake for at most 20 to 25 minutes. Take it out of the oven and let it get cool. When it is cool you can frost if how you like.
