How to make Mazapanes

Mazapanes are a two-ingredient Mexican peanut sweet made from just ground peanuts and powdered sugar, pressed into small rounds. The whole process takes about 15 minutes: blitz the peanuts to a fine powder, blend in the sugar, then press the paste into a mould. Mazapan is popular enough to have its own day, Dia del Mazapan, celebrated every 12 January, and the candy is now shipped well beyond Mexico.

Peanut mazapan has a toasty, nutty flavour that pairs with the light, powdery sugar for a texture that melts the moment it hits your tongue. It is easy to eat more than one.

Ingredients to make Mazapanes

  • Unsalted peanuts: 2 cups (about 300 g)
  • Powdered sugar: 1 1/3 cups (about 160 g)

Directions to make Mazapanes

  • Take two cups of unsalted peanuts and put them in the food processor.
  • Now, process them until they get converted into a fine powder.
  • Then, add in the recommended amount of sugar. Process it along with the peanuts.
  • Continue blending both ingredients until a fine powdered paste is formed. Be patient; depending on your food processor, this may take some time.
  • Make sure to give a frequent mix to all the ingredients so that the consistency and flavour stay fairly even. Also, scrape the edges of the processer once in a while.
  • Fill a cookie mould halfway with the ground peanut mixture and push it down with your fingers, the back of a scraper, or a spoon. Don’t be scared to apply a lot of pressure. The more compressed the mixture is, the more stable it will be.
  • Then, remove them with care, as they are easily broken.

Mazapanes Wrapping Procedure

  • Cut 10 pieces of cellophane or tissue into 4 by 3-inch (10 by 7.5 cm) rectangles to make the wrapper. Then, all the way down, cut small strips of less than 1 inch (2.5 cm) from the short sides toward the middle. Place the Mazapane in the centre and roll it over to completely cover the candy, then twist the ends.

Tips

  • I recommend using a food processor to prepare Mazapanes. If you don’t have a food processor, use a blender instead.
  • Although salted peanuts can be used to produce Mazapanes, if you want a more traditional Mazapan flavour, unsalted peanuts are the way to go.
  • Continue to mix until the peanuts release their oil and compact paste forms when pushed between your fingers.
  • When taking the Mazapan out of the mould, instead of pushing from the centre, push from the sides of the mould. To avoid breaking it, do it a little at a time.
  • The flavour of this recipe can be greatly altered by altering the way the peanuts are prepared. For a sweet and nutty flavour, we prefer to roast them lightly.
  • You can add a teaspoon of vanilla to this recipe for a nicer candy flavour.
