  • 1/2 cup demerara sugar, plus more for dusting (100g)
  • 3.5 oz of soft plant-based butter, plus extra for greasing (100g)
  • Vegetable oil for greasing

Instructions

  • Mix the flour and 1 teaspoon of sea salt in a large bowl. In the middle of the mix, make a well.
  • Mix the yeast with lukewarm water in a separate jug and let it sit for a few minutes.
  • Pour the yeast mixture into the well in the bowl slowly, mixing in the flour from the outside to make a dough.
  • Knead the dough for 10 minutes on a floured surface or until it is smooth and elastic.
  • Put the dough back in the bowl and cover it with plastic wrap or a clean, damp tea towel. Put it somewhere warm for an hour or until it’s doubled in size.
  • Cut dried apples into small pieces and peel, and slice finely fresh apples.
  • Mix the apples, cinnamon, vanilla, and sugar in a bowl.
  • Spread plant-based butter evenly over the dough and stretch it out to a 12x19-inch rectangle on an oiled work surface. Spread sugared apples and any juices on the dough.
  • Roll the dough into a sausage shape, beginning from the long side closest to you, and slice into 12 equal pieces.
  • Butter the inside of a baking pan and sprinkle it with sugar. Place the rolls in the pan with the swirl side up and cover them with plastic wrap or a clean, damp tea towel. Leave it in a warm place until it’s doubled in size again.
  • Set the oven to 350°F and sprinkle the buns with sugar. Bake them at the bottom of the oven for 30 minutes or until they are golden and sticky.
