Easy Vegan Gyros with Marinated Onions

vegan gyros recipe

Vegan gyros come down to two things: ultra-firm tofu pressed and marinated hard enough to take on the oregano, cumin, smoked paprika and cinnamon that make it taste Greek, and a jar of quick-pickled onions to cut through it. Everything else is assembly.

The marinated onions are the part people skip and then regret. They take five minutes, they keep a week, and they are the difference between this tasting like seasoned tofu in bread and tasting like a gyros. Make them first so they have time to sit.

Tips & Tricks for this Recipe:

vegan gyros
  1. Select the Correct Tofu - For this recipe, use ultra-firm tofu to guarantee that it retains its shape when cooking and has the perfect texture for gyros. If ultra-firm tofu is unavailable, extra-firm tofu can be used.
  2. Tofu should be pressed for at least 30 minutes if using regular soft tofu to eliminate excess water and help it keep its form. Wrap the tofu in a clean dish towel and set a heavy item on top to press it.
  3. Gently pour the marinade into the skillet with the tofu to allow the tofu to absorb the flavours and avoid becoming overly moist.
  4. Preheat the Pita Bread - Before assembling the gyros, lightly toast the pita bread in a toaster or on a griddle for added flavour and crunch.
  5. Make it Your Own - Feel free to make the dish your own by adding more veggies or toppings like sliced cucumber, lettuce, or vegan tzatziki sauce.
  6. Make Ahead - The marinated onions may be prepared ahead of time and refrigerated for up to a week. This will help you save time when preparing the gyros.
  7. Utilise Leftover Tofu - This dish is a terrific way to use up any leftover tofu from other meals. Just adjust the quantity of marinade and spice to taste.
  8. You’ll be able to prepare the most delicious and tasty vegan gyros ever with these tips and methods. Enjoy.

FAQs

What kind of tofu works best for vegan gyros?

Firm or ultra-firm, pressed well. Silken and soft tofu fall apart in the marinade and will not crisp. Pressing for at least twenty minutes matters more than the brand, because water in the tofu is water that the marinade cannot get into.

Can I make the marinated onions ahead?

Yes, and they are better for it. An hour is enough, and overnight in the fridge is better still, since the sharpness softens and the colour deepens. They keep about a week in a sealed jar and are worth making in double quantity.

What should I serve with vegan gyros?

Warm flatbread or pita, chopped tomato and cucumber, and something creamy to cut the spice. Vegan tzatziki is the obvious partner and takes five minutes. Chips inside the wrap is the Greek way to do it, and it is better than it sounds.

Storage:

  1. Separate the Tofu Gyros - To keep the cooked tofu and pita bread fresh, store them separately in sealed containers. This also keeps the pita bread from becoming mushy.
  2. Marinated Onions Should Be Stored Separately - Keep the marinated onions in a separate container in the fridge. They can last up to a week.
  3. Reheat With Caution - When reheating the tofu, be cautious about doing it gently so that it does not get dry or overdone. It may be reheated in the oven, the stovetop, or the microwave.
