Ingredients
- 2 blocks extra firm tofu, pressed
- 1 pinch salt
- 1 pinch pepper
- 3 tbsp maple syrup, divided
- 1 onion, chopped
- 1 poblano pepper, chopped
- 1 tsp garlic powder
- 1 tbsp smoked paprika
- 1 tbsp chili flakes
- 3 tbsp flour
- 1 cup (250 ml) vegan broth
- 1 tbsp tomato paste
- 2 tbsp ketchup
- 1 tbsp vegan BBQ sauce
- 1 tbsp mustard
- 1 tbsp vegan Worcestershire sauce
- 1 tbsp rice vinegar
- Burger buns
- Vegan butter (optional)
Instructions
- Drain and press the tofu. Crumble it into a large bowl.
- Add a pinch of salt and 2 tbsp of maple syrup to the tofu. Mix well.
- Fry the tofu over medium heat for 10 minutes, until the crumbs have dried out and started to colour at the edges.
- Add the chopped poblano pepper and onion to the pan, and fry for 2 minutes.
- Stir in the garlic powder, chili flakes, smoked paprika, salt, and pepper.
- Add the remaining 1 tbsp of maple syrup and a splash of soy sauce. Stir fry for 30 seconds.
- Mix in 3 tbsp of flour and continue to stir fry until the tofu turns golden.
- Stir in the tomato paste, ketchup, vegan BBQ sauce, and mustard.
- Add the vegan Worcestershire sauce and rice vinegar.
- Pour in 1 cup (250 ml) of vegan broth and let the mixture simmer for about 5 minutes on low-medium heat, until it thickens enough to sit on a bun without running off. Taste and adjust the sweet and sour balance before it comes off the heat.
- Toast the burger buns and spread some vegan butter on them, if desired.
- Serve the vegan sloppy joe mixture on the toasted buns.
How long does it keep?
Keep leftover vegan sloppy joe mixture in an airtight container in the fridge for up to 4 days. For longer storage, freeze it in a freezer-safe container or bag for up to 3 months. It thickens as it sits, so add a splash of stock or water when you reheat it, and toast the buns fresh.
Can I use lentils or TVP instead of tofu?
Yes, and both change the timing. Dried brown or green lentils need 25 to 30 minutes of simmering in stock before they are soft enough, and red lentils take 15 to 20 minutes but break down into a smoother, thicker mixture. Tinned lentils only need warming through. TVP mince is the quickest: pour boiling stock over it, leave it 5 to 10 minutes, squeeze out the excess, then fry it before the sauce goes in. In every case, add a little more tomato paste, because lentils and TVP soak up more sauce than tofu does.
Why is my sloppy joe mixture runny?
Usually not enough reduction, or not enough tomato paste. The flour in step 7 is the thickener, so let it cook in the pan for a minute before any liquid arrives, then simmer the finished mixture uncovered until it holds a line when you drag a spoon through it. Wet tofu is the other culprit, so press it properly and fry the crumbs until they are dry before anything else goes in.
