Vegan McChicken Easy Recipe
Vegan McChicken is a jackfruit-seitan patty coated in seasoned panko breadcrumbs and fried until golden. It sits in a toasted bun with shredded lettuce and a mustard-mayo dressing. The whole recipe, including a stint in the oven before frying, takes about an hour for two servings.

- 3 oz Jackfruit, non-sweetened (about 85 g)
- 6 oz Seitan (about 170 g)
- 2 tbsp Gluten Flour
- 2 tbsp Olive Oil
- ½ tbsp Smoked Paprika
- ½ Cup Water (about 120 ml)
- ½ Cup Flour (about 60 g)
- Salt and Pepper
- 3 tbsp Flour
- 7 oz Panko Breadcrumbs (about 200 g)
- Vegetable Oil for Frying
- 2 tbsp Vegan Mayonnaise
- 1 tbsp Mustard
- 4 Lettuce Leaves
- 2 Buns
How do you make vegan McChicken?
Start by placing the seitan in the blender.
Add a pinch of salt and blend until you get a smooth mixture.
Now Rinse the jackfruit, remove any seeds and crumble it using your hands.
In the meantime, pour the olive oil in a skillet and put over high heat.
Once the olive oil is hot, toss the jackfruit in it.
Roast it for 3 minutes, and season with some salt and pepper, then pour it inside a small bowl.
Add the blended seitan, and stir well to get a thick mixture.
If the mixture is too loose, you can 1 tbsp of gluten flour.
Now knead the dough for about 15 minutes do allow it to become stronger and more fibrous, then roll it in a sphere shape, slice into 4 parts and press in the shape of a burger.
Place it into an oven dish, spread them with olive oil and cook in the preheated oven for 30 minutes at 356°F (180°C).
In the meantime, we can prepare the breading.
Let’s begin by adding the smoked paprika to the flour, then mix the flour with the water.
You should get a loose batter.
Pour the panko breadcrumbs in a bigger bowl.
At this point, dip each burger inside the batter, then toss it into the panko breadcrumbs to get a nice thick breading.
Deep-fry each burger until it turns golden brown.
Shred the lettuce leaves using your hands, and then mix them with the vegan mayonnaise.
Add the mustard after that and use it as a dressing for the burger.
Roast the buns before serving the McChicken. It makes a satisfying plant-based alternative to the original.

Can I use another fruit instead of jackfruit?
Jackfruit is used here for its stringy, chicken-like texture once cooked and shredded. Hearts of palm or soy curls can work as a substitute, though the texture will be a little different.
Can vegan McChicken be baked instead of fried?
Yes. For a baked version, spray the breaded patties well with oil and bake at a high heat, turning halfway through, until golden and crisp on both sides.
