Vegan Walt Disney Copycat Chili

This vegan chili is a plant-based version of the chili served at Disneyland’s Carnation Cafe, made with beefy mushrooms, pinto and kidney beans, tomatoes and smoked paprika in one pot. It takes about 10 minutes to prep and 30 minutes to cook, and it’s free of soy, nuts and gluten. Top it with vegan sour cream, cheese and diced tomato.

What Makes This Taste Like the Original Disney Chili?

Smoked paprika is the key. Along with a few extra spices, it hits that beefy and slightly smoky note found in the original recipe. For the beefy texture, mushrooms do the work, since they have a meat-like consistency and flavour on their own and absorb seasonings the same way regular meat would.

Walt Disney himself always used to take his popular chili with saltine crackers, however in the Carnation Cafe, the chili is typically served with sour cream, grated cheddar, and 1-2 chopped tomatoes. It’s not only flavourful but it looks great too!

Yes. It’s made in a single pot and freezes well, so you can make a large batch and store portions in the freezer for later.

Vegan Walt Disney Style Chili

This tasty chili is a vegan twist of the popular Walt Disney chili served at Disneyland. It’s a very simple 1-pot recipe made with beefy mushrooms, tomatoes, beans and seasonings. Plus, it’s delish!

Cooking Time: ½ hour

Ingredients

  • ¾ pound mushrooms (about 340g), finely sliced
  • 1 lbs/450g portobello mushrooms, chopped
  • 1 medium Green bell pepper, diced
  • 1 can diced tomatoes
  • 2 plum tomatoes, chopped
  • 1 (14.5 oz/410g) can Pinto beans, rinsed and drained
  • 1 (14.5 oz/410g) can Kidney beans
  • 3 tbsp tomato paste,
  • 2 tbsp vegetable base
  • 4 cloves of garlic, minced
  • 1 tbsp ground cumin
  • ¾ tsp cayenne pepper
  • 1 tsp smoked paprika
  • 1 ½ tbsp onion powder

Toppings for Walt Disney Style Chili

  • ½ cup Vegan sour cream
  • 1 cup Vegan cheese, shredded
  • 1-2 tomatoes, diced

Directions

-Add the olive oil into a large pot to heat and add the sliced mushrooms. Allow them to cook over medium heat while you stir every 1-2 minutes, until the mushrooms are nice and tender.

-Once the mushrooms start to tenderize, add in the garlic and green peppers and mix well. Allow everything to cook for a couple of minutes.

-Next, add the onion powder, ground cumin, cayenne and salt and combine well.

-Lastly add the vegetable base, canned tomatoes, diced plum tomatoes, tomato paste and beans until mixed well.

-Bring everything to a boil and once it has reached that point, reduce the heat to low. Allow the chili to cook for 5-7 minutes to blend and set all the flavours.

-Add extra water and a bit of salt if necessary and serve with a spoonful of sour cream, vegan cheddar and diced tomatoes (optionally).
