Ingredients

  • Self-rising flour 300g
  • Coconut Flour 100g
  • Pinch of salt

  • Refined cane sugar 100g

  • Water 350ml

  • Vegan chocolate 1 ½ Cup
  • Canned coconut cream 1 ¾ cup

  • Raspberry jam ½ Cup

Instructions

Preparation of Vanilla sponge cake

  • Le the oven pre-heated to 350°F.
  • Take a clean and well-kept bowl. To prepare a vanilla sponge cake, combine all of the ingredients in a mixing bowl. Thoroughly combine the ingredients until a lump-free batter is formed. Make sure your batter isn’t overworked.
  • Place a non-stick piece of paper on the baking tin, pour the mixture in, and bake for 20 to 25 minutes.
  • Remove the soft vanilla cake from the oven and set it aside to cool for 1 hour. After that, cut the cake in half. The raspberry jam should be spread on the top of the cake, and the two cakes should be sandwiched together. You can also add whipped cream along with jam as per your choice.
  • Then neatly cut the cake into small squares using a knife.

To make the chocolate coating

  • Simply place a saucepan over the stove pot. Add in the vegan chocolate and coconut cream. Cook the ingredients over medium heat until a smooth consistency is achieved.

Coating and Filling

  • In a bowl, pour your freshly made chocolate coating.
  • Place the desiccated coconut in a separate dish.
  • Toss a piece of cake in the chocolate sauce until it is completely covered. Then cover the lamingtons completely with desiccated coconuts and repeat with the remaining pieces. Lamingtons will be easier to handle if the coating process is done with two forks. Allow 1 hour before serving.
