Ingredients

  • 2 burger buns
  • 1 cup  oil
  • 150g extra firm tofu
  • 1/2 cup flour
  • 1 tbsp of cornstarch
  • 2 tbsp soy sauce
  • 1/2 cup of water
  • 1/2 cup panko breadcrumbs
  • 5g leafy greens
  • 1 tsp white sesame seeds
  • 1 purple cabbage
  • 1 carrot
  • 1 apple
  • 1 stick of green onion
  • 2 tbsp mayo
  • Pinch of salt
  • 2 tbsp sriracha
  • 1 tsp of curry powder
  • 2 tsp rice vinegar
  • 1 cup cornflakes

Directions

  1. Make thick patties out of the extra firm tofu.
  2. To make the slaw, thinly slice the purple cabbage, thinly slice the carrot and apple into matchsticks, and finely chop the green onion. Set them aside in a bowl with mayo, curry, a touch of salt, and sriracha.
  3. In a small mixing basin, combine the flour, soy sauce, and water until it forms a thick paste.
    In a separate small bowl, combine the panko and cornflakes.
  4. Coat the tofu in the sticky flour mixture before coating it with the panko.
  5. Toast the burger buns for 1 minute on each side in a dry frying pan before placing them on a cooling rack.
  6. In a frying pan, heat the oil to medium.
  7. Place the breaded tofu in the pan and cook for 2-3 minutes on each side. Place the tofu on a paper towel-lined platter.
  8. Assemble the burger by layering leafy greens on the bottom bun, followed by the tofu katsu and a big scoop of the crunchy slaw. Serve topped with toasted sesame seeds.
