  • Start by pre-heating your oven to 390F, or 200°C.
  • If you’re using a block of puff pastry, roll it into a rectangle that is approximately 1/8 inch thick and 10 inches broad (25 cm) if possible (3mm). Peel off the baking paper from a pre-rolled puff pastry sheet before removing it from the container.
  • Combine the ground almonds, sugar and cinnamon; spread 1/2 the mixture on a wooden board; top with the pastry; and then cover with the rest of the sugar mixture.
  • Gently roll the pastry with a rolling pin to ensure that the sugar and almond mixture pushes into and binds to it, covering it completely. Bring the two longer sides together in the center by folding them in middle.
  • After that, repeat the previous process by folding both sides back over to the middle.
  • To finish, flip the bottom half over the top and roll the pastry lengthwise with your rolling pin, lightly pressing the pastry together.
  • Slice the rolled-up pastry into 1/4 inch or 6-mm-thick pieces using a sharp knife.

Baking Palmiers

  • Arrange the pieces on prepared baking sheets, filled sides up, with a gap of approximately 2 inch (4-5 cm).
  • Bake palmiers for 15 to 19 minutes, or until golden brown, 390°F. Keep an eye on them since they are easily overbaked or burned.
  • Transfer the baked palmiers to a wire rack to chill.
  • After cooling, store in an airtight container. Although they should last for several days, they are best when they are fresh and at the crispiest.
